I’m not usually a meatloaf person, but switching out the usual ketchup sauce for a bbq sauce, makes these mini meatloaves a menu must.
2 lbs hamburger meat
1 cup Italian seasoning bread crumbs
1 onion minced
2 cloves garlic
2 tbsp Grill Mates hamburger seasoning
1 tbsp dried parsley
1/4 cup BBQ sauce, plus more for brushing on the top
1/2 cup water
Preheat oven to 375.
Mix all ingredients except for 1/4 cup BBQ sauce.
Put meat mixture into muffin tins. You could use an ice cream scoop or just roll into balls to keep a nice rounded shape.
Brush extra BBQ sauce on the tops of the mini ‘loaves’.
Bake for 30 minutes.
These also make great freezer meals. Flash freeze in the muffin tins then place in a ziplock bag. When you’re ready to cook them, place back in your muffin tin, brush tops with BBQ sauce and bake.
