Foodie Friday: Pinterest Props

Did you notice that I didn't have a Foodie Friday post last week. I HATE it when I miss a post. Especially, when I miss it because I just didn't have something ready. It's not fair to you. If I am going to run this blog like a business, and I'm trying to, I need to be consistent.

I love the weekly Foodie Friday posts, but I'm running into a bit of a dilemma with them. The problem is  I am not a terribly creative chef. I have family recipes I use a lot, I sometimes modify a recipe I find, but mostly I stick to the recipe as I find them. That makes it difficult for me to come up with a new recipe each and every week.

So, after thinking about ways to solve this problem, I have come up with two solutions. The first I know without a doubt I can and will be doing. I am going to start posting the last Friday of the month a Pinterest Props post; recipes I have found and pinned that really are as good as they look. I mean, we all know that not all the recipes on Pinterest are golden, so let's sort through them and find the really good ones!

The second solution really depends on you. I would like to host Foodie Friday Guest Posts. There are a ton of you who link up to the Show & Tell link party with some pretty amazing looking recipes. Would you be willing to share them here? I'm looking for one post a month (maybe two if there is enough interest). If you'd like to share a recipe one month, please email me (gmbergemann at gmail dot com) or comment below and let me know so I can work up a schedule.

And if you are wondering WHY you should put your hard work on someone else's blog, the answer is more exposure. Guest posting allows you to reach some new audience members with links back to your blog of course. And those links back to your blog helps boost your SEO which in turn means more traffic to your blog. So, think about it...

Ok, so with all that said.... let's take a look at some recipes I have tried recently from Pinterest.

Ginger and Cilantro Baked Tilapia Oh, my gosh! This is the best recipe I have tried on Pinterest to date!! Yes, it is really that amazing. The only thing I changed was the wine. I'm not a drinker, and yes I know the alcohol evaporates, but I'm just not one to go down the beer and wine aisle and purchase something. So, I tried using cooking wine which is in the vinegar aisle and does not require you to be carded (not that I would be), it's got about as much alcohol in at as mouth wash. Anyway, the recipe was easy and really, really tasty!

Quick and Easy Weeknight Shrimp Scampi The name says it all. It really is quick, easy, and perfect for a weeknight dinner. The best part is that my daughter who is becoming averse to red sauce on spaghetti loves this buttery scampi. And just for a little punch of flavor, I garnished with cilantro instead of parsley. A definite winner.

Chicken and Vegetable Quinoa Stir-Fry Ok, so I think I used cilantro in every single one of these dishes I'm highlighting this month; maybe because I love it so much. So, on the list of awesome things about this recipe...it's a stir fry, check....it has cilantro in it, check, it has quinoa which is a really healthy grain, check....it has an egg mixed in(coupled with the quinoa and chicken, this recipe is full of muscle building proteins), check,...it's full of vegetables, check,... oh and it tastes great, double check.

  1. Thanks so much for linking to my stir-fried quinoa post. It's a recipe inspired by my husband's travels in Peru, so I don't know if it's in any way authentic. But I tried!
