Guest Post: Salted Chocolate Date Bites

Hello! I'm Rochelle from Wheatless Rochelle. I'm so excited to be guest blogging for Ginger. I'm a vegetarian and eat gluten-free so my blog is mostly about the meals I cook for my family, recipes I try out, reviews for products I buy, and various other bits of information about healthy eating, nutrition, and whole foods.

I'm also the mom to some pretty awesome kids so the food I cook is always something that kids will enjoy, too! Today, I wanted to share a recipe that is a variation of one of our household favorite treats. I love mixing up dates, nuts, a bit of chocolate, and whatever else I have on hand to make quick snack bites. I've been using coconut milk and chia seed lately but was inspired by a post at Vegetarian Ventures to use almond butter. Today's variation that I'm sharing here is based on that. It's super simple recipe, very fast, and involves no cooking. I hope you enjoy it as much as we do!

Salted Chocolate Date Bites
1 1/2 cups dates, pitted
1/2 cup almond butter
1/2 cup raw almonds
1/2 cup raw sunflower seeds
2 oz. chocolate, melted
1 tsp cinnamon
1 tsp. nutmeg
1 tsp. allspice
1/2 tsp. sea salt (plus more for garnish)

Soak the dates in warm water for about 10-15 minutes. Drain.

In a food processor or Vitamix blender, combine all of the ingredients. Pulse to form a crumbly paste. If necessary, add a bit of water.

Roll into small balls and place on waxed paper.

Use a wet fork to press down to small cookies.

Garnish with additional sea salt. Put into the refrigerator for about 2 hours or until firm.
